If you're not a fan of the hard cases, be they plastic or aluminium, then this should be really good news for you: Giant Loop surfaces a new, comprehensive line of soft bags for adventure-touring, and now offers a limited lifetime guarantee, too.
2013 also marks a premiere: the Siskiyou pannier bags, with a combined capacity of 70 liters. These soft panniers come with a detachable waterproof liner, heat shields for the dual-exhaust bikes, and can be used with or without luggage racks. External pockets for water bottles are standard.

The product line is complemented by a 120-liter soft top case, the Fort Rock, and it needs some additional waterproof lining. Saddlebags such as the Great Basin, Coyote and Mojavi, expand the available storage options, according to the needed space.

Finally, the Zigzag handlebar bag might be helpful for those whose bikes aren't already full with added gadgets. And in case you bike has no handguards (why would you not have handguards installed , by the way) the Bushwhackers belt-on pair could do, somehow.

Prices are not the most rider-friendly one we ever saw: from $45 (€34.5) for the 1.5 L handlebar Zigzag, to $649 (€498) for the Siskiyou panniers, but hey, it was you who wanted soft bags in the first place. We loved the Kriega Overlander 60 way better, though they were a bit more expensive, too.
