Too much gas and your rear wheel can slip out of control, helping you get better acquainted with the asphalt. Too little throttle and you're in for a most funny crash, simply stalling and falling like a toddler.
As far as this video tells us, it may be that the rider went off with too much of a heavy hand, lost rear wheel traction completely and came off the bike. He was ever so lucky no car came in from behind so he just picked up the bike and rode away.
